Miso Glazed Chicken

Ingredients

  • 4 each 6-8oz. Chicken Breast
  • ½ Cup Brown Miso Paste
  • 2 TBL White Wine
  • 1 TBL minced fresh Ginger
  • 1 TBL Soy Sauce
  • Olive Oil as Needed
  • 1/3 Cup + 2TBL of Honey
  • 1 TBL minced garlic
  • 1 TBL minced onion
  • 1 TBL Rice Wine Vinegar

Preparation

  1. Preheat Oven to 350F.
  2. Prep garlic, onion, & ginger. Sauté in a pan with a little olive oil for a minute or two to aromatize the aromatics. Set the ginger/garlic/onion aside to cool.
  3. In a bowl combine Miso, Honey, White Wine, Soy Sauce, & Vinegar. Whisk together till fully incorporated. Fold in sauteed aromatics and allow to marinate for at least 15 minutes.
  4. Place an oven safe sauté pan over medium heat. Add a small amount of olive oil and sear the chicken breasts. DO NOT worry about seasoning the chicken with salt or pepper, as the miso is salty enough on its own. Sear each chicken breast on both sides for 3-4 minutes of medium heat until they begin to brown and caramelize.
  5. Once seared on both sides, generously spoon miso sauce over the breast and place in the oven (reserved some miso sauce to re-sauce after baking if desired). Bake for 8-12 minutes, or until the breast reaches an internal temperature of 160f in the thickest part of the breast.
  6. Remove chicken from oven and allow to rest for at least 5 minutes. Re-sauce with extra miso if desired. Plate with your favorite sides and white rice. Do not forget to use the pan drippings if you like! Bon Appetit!
